Lemon and garlic marinated fried chicken

Serves Approx 4

Ingredients

1 chicken cut into pieces or the equivalent quantity of chicken

1 lemon

1 garlic clove

1 onion

1 parsley sprig

1 bay leaf

250ml/8 fl oz olive oil

1 egg

plain flour

salt and pepper

 

Directions

Juice the lemon. Chop the onion, the garlic and the parsely finely. In a bowl mix together 3/4 of the olive oil together with the lemon juice, garlic, parsley, onion and bay leaf. Season the chicken pieces with the salt and pepper then add the chicken to the mix and coat it well, then leave it to marinate for around 2 hours.

Remove the chicken and drain off excess marinade, then pat dry with a paper towel. Dust each piece of chicken in the flour. Beat the egg together with a small pinch of salt, and then dip the chicken into the egg. While doing this, heat the remaining oil in a fry pan.

Add your chicken to the pan and cook on a medium heat for approximately 10minutes. The aim is to get the chicken a nice even golden brown. You will need to turn the pieces frequently to help even cooking throughout. Drain the chicken on kitchen paper and serve.
