This is a relatively easy chicken noodle soup recipe that takes a couple of hours to prepare. There are other quicker recipes out there but chicken noodle soup tastes best when you do it properly from scratch using the slower cooking methods. This recipe requires that you start with a raw chicken suitable for stewing, hence the extra time involved.
Ingredients1 2.5 kg (6lb) chicken suitable for stewing
Directions
Cut up the chicken into pieces. Chop the onion, carrot, celery and thyme and parsley.
Bring these ingredients to the boil then reduce the heat. Simmer for a further 2 to 2/1/2 hours with the lid on the pot.
Finally put the strained broth back into the pot by itself along with your chicken pieces and noodles of choice. You may also add the carrots back in if you wish.

This is another chicken noodle soup recipe that is quicker than the previous one. It still tastes good but utilizes precooked chicken and premade chicken broth or stock. It will only take around 10-15 mins to cook. For the chicken you can use any precooked chicken you like and simply chop it into little bite sized chunks for the soup. The chicken broth that is the basis for this quick recipe can be bought in cans or cartons from most supermarkets, but you of course could make your own from scratch but it will take alot longer of course.
IngredientsCooked chicken chunks ( about 2- 2/1/2 Cups) 1.2 - 1.5 litres (45 -50fl oz) of chicken stock broth 2 celery stalks medium sized 3 carrots medium 1 medium onion Noodles – egg noodles small and shaped to suit your preference, enough to match your soup quantity. salt and pepper
DirectionsPrecooked chicken is the key to making this chicken noodle soup recipe fast, whether the chicken was boiled grilled or BBQ’d it doesn’t matter. Simply cut up your chicken into bite sized pieces. Chop up your vegetables into similar sized pieces as the chicken. Grab your large pot or saucepan and put in your chicken broth together with a pinch of salt and pepper as well your chopped up vegetables and your chicken. On a high heat bring this to the boil and then reduce the heat down to a medium temperature. Cook for around 15minutes until the vegetables are fully done properly. As you are doing this you should also boil up your noodles in another pot as the instructions suggest. A good tip is not to cook the noodles fully through in the hot water, but rather cook them about 1/2 or 3/4 done in the water, then drain and transfer them to the chicken broth pot to get finally cooked through. This way they can absorb some of that nice chicken broth. It should take about 15minutes to complete this chicken noodle soup then simply season it with more slat and pepper if it needs it, then serve it up.
