Choosing Chicken
Whole chickens are usually classified according to weight and age. Each factor along with the breeding of the chicken can determine what sort of cooking method is best suited to use with it.
As far as flavor goes, the individual parts of the chicken meat will differ in taste. Thigh meat usually contains the most flavor along with wings. While the breast fillets are generally less flavoursome.
Tips For Cooking Chicken
1) If you are roasting a whole chicken and you wish to stuff it… firstly make sure the chicken is wiped dry inside and out. Obviously you will want to remove the giblets if the cavity still has them. When stuffing the chicken leave it until the last moment before you are going to cook start cooking it. It is always best to do this to avoid raw liquids entering the stuffing from inside the chicken.
2) When testing to see if a chicken is cooked, it is often suggested that you use a skewer to spike the bird in the leg/ thigh area to see how the juices come out. If they come out pink then the chicken is not sufficiently cooked. The juices should run a clear color.
